After a lifetime of loving the finely grated daikon that’s common in Japanese cuisine, but never knowing how to properly achieve the texture when cooking at home, Naoko of Toiro recently blew my mind via this suri plate grater! The grating surface is embedded with jagged shards of porcelain, and it transforms daikon into snowy piles of perfection (just grate, strain to get rid of the juices, et voilà!).
